Baked Salmon with Asparagus and Sweet Potato

 

Ingredients:

  • 200g of salmon fillet
  • 150g of asparagus, trimmed
  • 200g of sweet potatoes, peeled and cubed
  • 3 tablespoons of olive oil
  • 1 teaspoon of garlic powder
  • Salt and pepper to taste
  • 1 tablespoon of lemon juice
  • Fresh parsley for garnish

Kitchen Tools Needed:

  • Oven
  • Baking dish
  • Aluminum foil
  • Mixing bowl
  • Knife
  • Cutting board

Instructions:

  • Preheat the oven to 200°C (400°F).
  • In a mixing bowl, toss the cubed sweet potatoes with 1 tablespoon of olive oil, garlic powder, salt, and pepper. Spread them out in a baking dish.
  • Place the salmon fillet in the center of the baking dish. Drizzle with 1 tablespoon of olive oil, lemon juice, salt, and pepper.
  • Arrange the asparagus around the salmon and drizzle with the remaining tablespoon of olive oil.
  • Cover the dish with aluminum foil and bake in the preheated oven for 15 minutes.
  • After 15 minutes, remove the foil and bake for an additional 10 minutes, or until the salmon is cooked through, and the sweet potatoes are tender.
  • Garnish with fresh parsley before serving.
